St. Peter’s Bread Recipe
- Makes 4 Pita Size Loaves
- Ingredients
- 1 tablespoon of active dry yeast
- 7/8 cup lukewarm water (or a little more)
- 5 tablespoons of honey
- 2 ½ tablespoons of vegetable oil
- ½ teaspoon of salt
- 2 2/3 cups whole-wheat flour
- ½ cup unbleached all-purpose flour
- Combine yeast and water in a large bowl, stirring until yeast is dissolved. Add the honey, oil, and salt and set aside for five minutes.
- Add the whole-wheat flour and beat for about five minutes, gradually adding all-purpose flour until the dough begins to pull away from the sides of the bowl.
- Turn out on a lightly floured surface. Knead for five minutes, until dough is smooth and elastic; add flour as necessary to reduce stickiness.
- Lightly butter a large bowl. Place dough in bowl and turn to coat on all sides.
- Cover with a damp cloth and let rise in a warm draft-free place until doubled in bulk, 2-3 hours.
- Preheat oven to 375 degrees. Grease (or use non-stick) baking sheets.
- Divide dough into 4 large balls. Press down and form pita bread type loaves. Cut crosses on the tops.
- Bake for eleven minutes until golden brown and center is done. Transfer to wire rack to cool. Put in zip-lock bag and bring to church.
